1 - Remove your joint from the fridge and place on a plate 15 minutes before you want it to go into your oven.
2- Preheat your oven to 170 degrees celcius.
3- place your joint in a roasting dish and cook for 20 minutes per lb plus 20 minutes or 44 minutes per kg plus 44 minutes. This will give you a joint that is cooked medium.
4- Allow your joint to rest for a minimum of 20 minutes before eating.
